Chef Kawaharahata who boldly expresses the “Gomi” that composes the food, “sour, bitter, sweet, pungent, salty”.

After learning the essence of Japanese-style cooking at Michelin one-star in Gion, Kyoto, and then went to Ginza, Tokyo, opened Kappo Ami in 1998 in Fukuoka and Nakashu. The restaurant also won one Michelin star in 2014, but has been expanding its activities globally, such as making halal-certified curry.

An essential part of talking about Kawaharahata is "local production for local consumption," which uses ingredients from Fukuoka and Kyushu.

The ingredients are special ones that producers grow with affection, and that he examine by himself and purchase after hearing their thoughts.
