This time, Mr. Hiroshi Saeki, the owner of "Ginza Sushi Saeki", which used to be called a legendary sushi restaurant in Kitashinchi, Osaka with a two-year waiting list and now has expanded to Ginza, Tokyo, and has been wowing the palates of foodies and celebrities from all over the world.
He is now considered a legendary sushi chef, and this will be his second appearance at Sushi-Shan Night since 2018.

<Profile of Hiroshi Saeki, General Manager of Sushi Saeki in Ginza, Tokyo.>
He started his career at the age of 17 in Osaka, and became independent at the age of 36.
He closed the restaurant in 2018 and moved to Nanzenji, Kyoto. In 2019, he opened his first restaurant in Ginza, Tokyo.
In 2020, we will open Sushi Shirogane Saekin as our second restaurant in Tokyo. In 2022, he plans to open another restaurant in Kitashinchi.
Although he is a genuine Kansai native, he has continued his own research into the world of Edo-mae sushi, including his unique preparation, rice, and nigiri techniques, and his evolution continues to this day. His dream is to serve sushi to the Emperor of Japan. This will be his second appearance at Sushi-Shan Night since 2018.
