This rice is popular among customers who can taste the deep flavor of mushrooms while being comforted by the many delicious ingredients of winter.
The key to cooking this dish is to fry the lotus root quickly and let the vegetables soak up the broth before cooking. The mitsuba (mitsuba means mitsuba in Japanese) is used to add fragrance to the cooked rice.
It tastes even better when cooked in an earthenware pot.
