Originally from Hokkaido, Kato learned the essence of deliciousness at the three-star French restaurant "Moliere".
From there, he moved to Europe and spent his days learning at "noma" in Denmark, a place that many gourmets around the world would like to visit at least once.
He returned to Japan as a founding member of INUA to carry on the genes of "noma" in Japan.
After the closing of INUA, he went back to Japan to learn the essence of Japanese cuisine that chefs around the world use in their creations.
