I spent several months in Chengdu, Sichuan during my three-year stay in Shanghai before opening ShinoiS.
I spent a few months in Chengdu, Sichuan.
Suddenly, I was thinking about "Nare-zushi", which was described in a Chinese cooking classic I picked up there.
I went through the literature and traced the memory of ancient times, and thought about the life of the local people at that time.
What if inland people without oceans on the continent made "sushi"?
Guided by this sentence that came to my mind during my stay in Chengdu, Sichuan, and by the documents I came across there, I decided to make sushi.
