At TOMONO, we challenge ourselves to create innovative and original dishes that combine seasonal ingredients in new ways.
Although TOMONO is a Chinese restaurant, we do not limit our cooking methods to Chinese cuisine. Depending on the ingredients, we use Japanese and Western techniques to create dishes that are different from the other restaurants.
The genre is not Chinese, not Japanese, not Western. It is a TOMONO original.
Chef Tomono is very particular about the way he prepares ingredients. Choosing the right cooking method for the ingredients is the key to making them taste the best.
For example, at Tomono, we use cooking methods that are rare in Chinese cuisine, such as charcoal firing and aging of ingredients. This is because there are some ingredients that are better prepared using non-Chinese cooking methods. Also. We also offer Chinese dishes inspired by Japanese and Western cuisine. By adding the essence of Chinese cuisine, techniques, and authentic seasonings imported from mainland China to a menu inspired by Japanese and Western cuisine, you will be able to experience the possibilities of new Chinese cuisine through a new chemical reaction between Japanese, Chinese, and Western cuisine. However, this does not mean that we are pursuing only deliciousness to the extreme. TOMONO is also committed to making food that is good for the body. TOMONO does not use any chemical seasonings, but rather carefully selects ingredients and spends a lot of time and effort to create TOMONO's original soups and sauces. The essence of TOMONO is innovative cuisine that is both tasty and healthy. He worked in a Michelin-starred fine dining Chinese restaurant. Since his appointment as Chef de Cuisine, he has been a star chef and has kept his Michelin star. He opened TOMONO with the aim of offering innovative fine Chinese cuisine based on traditional Chinese dishes combined with seafood and other premium ingredients invented by Ryo Tomono. Today, Tomono continues to take Chinese cuisine seriously and is always looking for new challenges.
