Restaurant MAZ was designed by chef Virgilio Martinez of Peru's “Central” and his institute “Mater Iniciativa”.
Through a deep understanding of the Peruvian ecosystem based on years of research and an exploration of Japanese ingredients, MAZ offers a unique gastronomic experience that captures the Peruvian ecosystem at different altitudes.
