Chef Tatsuhito Uchida, who won No. 1 in Shanghai, has moved his restaurant to Ginza, a Chinese restaurant that is attracting a lot of attention.
Mr. Uchida entered the world of Chinese cuisine at the age of 15. He trained at "JUKEI-HANTEN ," a famous Szechuan restaurant in Yokohama's Chinatown, and at the age of 20, he went to China to study at "Shanghai Galaxy Hotel" and "Shanghai Zhongyou Hotel.
At the young age of 24, he opened his own restaurant, Koen.
His cuisine, which combines the boldness of Chinese cuisine with the delicacy of the Japanese, has been described as "Japanese-style Chinese" and quickly became popular.
After winning first place in the Chinese cuisine category at the Shanghai Restaurant Awards three times, Mr. Uchida, who has reached the pinnacle of Chinese cuisine in Shanghai, has now made his triumphant return to open his own restaurant.
His specialty is "raised shark's fin and dried abalone" soup, which is steamed for several days.
