We are pleased to announce the opening of our new Japanese restaurant, 「Akasaka Shimabukuro」.
We would like to thank all of you for your support.
After gaining experience as a head chef at numerous Japanese restaurants,
I became the first head chef at 「Ginza Shinohara」, and have served with sincerity and integrity.
「The word “Shoku”(food) is written with the words “people” and “improve”.」These are words I received from a customer during my apprenticeship and took to heart.
At 「Akasaka Shimabukuro」, we hope to build a good relationship with you through food.
When wild vegetables start to appear, spring has arrived.
When the hamo (Japanese conger eel) starts to appear, summer has arrived.
When matsutake mushrooms start to appear, autumn has arrived.
When root vegetables are delicious, winter has arrived...
We hope you will experience the changing colors of the season with all five tastes and senses.
The dashi broth is made by grinding freshly shaved dried bonito flakes for each customer,
so you will be able to enjoy the pinnacle of dashi tastes that our chefs are known for.
The handmade “juwari soba” (100% buckwheat noodles) are also a specialty, with a unique texture and aroma.
Simple yet delicate flavors that remind you of the four seasons,
And a sense of fun in a classic dish.
We hope to serve such dishes.

*We serve soba in our courses. Therefore, we ask that guests with buckwheat noodle allergies refrain from making reservations.
