Maebashi, Gunma French

The French word "cépages" means "varieties". In wine terms, it refers to the grape varieties used in wine and the blend ratio. Based on the concept of "creating one of the best places in Japan to taste great wine and food," the new restaurant "cépages" will offer authentic French cuisine that blends Gunma's culinary culture and ingredients with the best ingredients from around Japan, accompanied by fine wines. For example, a dish that arranges "yakimanju" (baked manju), a favorite of Gunma people, with a uniquely blended dough baked to perfection, foie gras terrine, and Kochi Prefecture's black honey boca, is served with Sauternes, a very sweet, noble rot wine from Bordeaux. The dish is also prepared in front of the guests, allowing them to enjoy the live performance as well as the perfect balance between the food and wine.

【Chef Profile】
Chef Kazuki Ishibashi, born in 1987, is a 35-year-old culinary professional.
After graduating from culinary school, he spent 8 and a half years honing his skills at the French restaurant "Apicius" in Yurakucho, Tokyo.
Following that, he served as a section chef at "L'Effervescence" a restaurant in Japan that values the country's terroir, and has earned three Michelin stars.

Subsequently, he worked at various restaurants in Tokyo before assuming the position of Chef at "cépages."
