Chef Kazuki Kosuge weaves together the essence of Japanese, Western, and Chinese cuisine to create a supreme dish using the freshest ingredients of the day.
The courses consist only of the chef's "omakase" menu, which uses a variety of seasonal "Hokkaido ingredients" and rare ingredients.
Sometimes simple, sometimes innovative, the owner uses a variety of techniques to create a full Hokkaido dining experience.
