The cuisine is an innovation of Cantonese cuisine, a hybrid of Japanese ingredients and Cantonese techniques.

The special course at Nihonbashi Takase includes a selection of signature dishes: Cantonese-style white fish sashimi salad, lobster with mango mayonnaise sauce, steamed spotted grouper, grilled eel, and a rich shark fin soup with superior broth.

This special course includes four Shanghai crab dishes such as Shanghai crab in Shaoxing wine, fried radish pie with Shanghai crab paste, steamed Shanghai crab with crab miso sauce, rolled Chinese cabbage with Shanghai crab paste, and the specialties: shark fin in Shanghainese soup thickened with soy sauce and steamed clear steamed Dongxing grouper.

Up to 2 pieces per person can be taken out.
