I have been pursuing my idea of Japanese French cuisine in the glamorous Aoyama and Hiroo areas, but with the changing times, I have felt uncomfortable with the style I have been using.
I chose to work at the counter this time because I wanted to convey more of a freshly prepared feeling and more of the Japanese ingredients and artisanal techniques that I am proud to present to the world.
I want to bring smiles to the faces of the people involved in this project.
With this in mind, I will continue to face my customers.
