Aurochs" is the name of the source breed of domestic cattle in existence.
Although the wild breed is extinct, its lineage has been passed down through the generations to the present Wagyu black cattle and Angus cattle.
We want to convey the true taste of meat that people today don't know."
The name of our restaurant, "Aurochs," is a reflection of this prayer.
All the meats served at our restaurant are handled by Mr. Yoshinobu Shimpo of Sakaeya, a "master chef.
The meats that line the counter are carefully preserved in the restaurant's aging room, just as Mr. Shinbo taught us.
We also offer "Jibeef" beef from Hokkaido, which is completely wild-grazed beef living in the fields and mountains, and "Kusahara Beef" from Kumamoto, which is red cattle living in a more natural environment and grazing in the mountains.
We offer meat from cattle that live in a more natural environment.
Each dish is prepared with care.
