Monthly ingredients from Menya Kimoto.

"Menya Kimoto" inherits the Japanese cuisine DNA of Michelin two-star "Kimoto" and challenges the world of noodles and soups with a new sense of value.
■Dashi
We use Rishiri kelp and bonito flakes shaved in our restaurant.
The broth is made at 98°C without boiling to avoid any harsh taste and scum.
Three types of brand-name jidori chicken are carefully selected.
You can enjoy the deep flavor of Kumano Jidori chicken, the flavorful aroma of Amakusa Daioh, and the unique sharpness of Okazaki Ohan at once.
No gara is used at all, and the whole chicken, down to the meat, is used for the broth alone.
Only six cups of soup stock are made from each chicken.
The finest ingredients (white sea bream, abalone, pike conger, etc.) used at "Kimoto" are selected on a monthly basis, and broth is also made from them to sublimate the chicken broth-based soup.
The water used is "Evian. The water gives the soup its rich flavor.
The gentle broth is made with the beauty of Japanese cuisine, and the saltiness is perfectly adjusted to create a soup you can drink up.
■Chashu pork
Chashu pork is made from brand-name pork such as Tokyo X and stuffed with concentrated meaty flavor using Kimoto's unique and painstaking cooking method.
■Eggs
"Yume-oh" eggs are used. We use only salt water to bring out the flavor of the ingredients.
■Seasoning
Of course, no chemical seasonings are used.
We use "Tatsuno brand" soy sauce, China's finest "Court Salt", and salt from Christmas Island, as well as carefully selected soy sauce and salt.
Please savor the unparalleled delicate flavor that can be truly described as the epitome of luxury.
