Having studied at the legendary sushi restaurants Sushi Mizutani in Ginza and Sushi Hashimoto in Shintomicho, Kazuki Noguchi learned the techniques and attitude towards sushi.
He returned to his hometown, Fukuoka, to open Kotan in November 2021, with the desire to "open a restaurant serving Edo-mae sushi near Itoshima, where I was born and raised".
The owner himself goes to the Nagahama Fresh Fish Market and the Yanagibashi Union Market every morning to stock up on seafood.
Enjoy the nigiri of the master Noguchi, who uses seafood from Kyushu and sublimates it into his own unique sushi using Edo-mae techniques.
