In spring, natural wild vegetables arrive from the satoyama, in early summer, natural sweetfish arrives fresh after tomozuri fishing, and natural eel arrives from all over the country. In summer, a wide variety of wild mushrooms and matsutake mushrooms, which are rarely heard of, are served. In winter, fugu (blowfish), Matsuba crab, duck, wild boar, and wild game such as black bear are served.
We hope you enjoy the aroma and taste of these wild ingredients.
