Sushi Kadan

Gora Kadan, one of the most famous ryokan in Hakone, will open Sushi Kadan in November 2023, under the supervision of Sushi Yoshitake in Ginza, a three-star restaurant for the 12th consecutive year.

Gora Kadan" is a famous ryokan (Japanese-style inn), loved by the world's dignitaries, nestled in the beautiful nature of Hakone.
The inn was originally built on the site of a villa of the Kaninnomiya family, one of the four royal families of the Edo period, and was established in 1952.
The modern architecture of the ryokan, which stands on a site of approximately 5,000 tsubo (approximately 1,000 square meters) that displays the beauty of the four seasons, provides an open space in which one can feel nature. In 1991, the restaurant became a member of the world-famous "Relais & Chateaux" after undergoing a rigorous selection process, and has been highly acclaimed by distinguished guests from Japan and abroad.

Sushi Yoshitake opened in Ginza in 2010 and has been awarded three stars in the Michelin Guide Tokyo for 12 consecutive years.
The restaurant's uncompromising Edo-mae-style sushi has been highly acclaimed both in Japan and abroad.
Sushi Kadan, which will be jointly opened by the two companies, will be located in the most historic of the buildings on the Gora Kadan site, the former imperial family's Western-style building, and will serve the finest sushi at a newly constructed counter.
The sushi, prepared with a new sensibility while preserving tradition, is a perfect fusion of the special vinegared rice, which is an evolution of the red vinegar handed down from the Edo period, and seasonal ingredients procured from all over Japan and prepared with skill and care.
Please come to Hakone to experience the one and only refined sushi that continues to attract gourmets from around the world.

Reservation rules

*Restaurant is located on the 2nd floor of the Kyu kaninnomiya Bettei(former kaninnomiya Palace villa) in Gora Kadan. Please note that you will only be able to use the stairs when coming to the restaurant.
*Reservations for accommodation are not accepted on this page.
*Dress code: light clothing such as shorts and sandals are not permitted in the restaurant. （For guests staying at the hotel, yukata, the hotel's indoor clothes, are also available.).
*Alcoholic beverages are not permitted.
*Please refrain from wearing perfume, eau de cologne, or other strong scents. Please be sure to inform your companions.
*To prevent damage to the counter, please remove watches, jewellery and other ornaments.
*Smoking is not permitted in the restaurant.
*Please note that we can accommodate allergies, but we cannot accommodate foods that you are allergic to. Please note that we are unable to accommodate a wide range of allergies (including an allergy to anisakiasis).
*The restaurant will start at the same time as your reservation. If you arrive late or leave the restaurant, we may not be able to serve you a portion of your course. If you arrive more than 15 minutes late, you will be considered a no-show and your seat will be given to another customer.
*We ask that the person who made the reservation come to the store in person. We have seen many people coming to the restaurant on behalf of others, so we ask for your cooperation in the following two points when making a reservation.
-If someone other than the person who made the reservation comes to the store, we will not allow him or her to enter the store and will treat it as a no-show.
-You may be asked to show your ID when you enter the restaurant. Please note that if you do not have your ID, we may have to use a proxy.
