We are excited to announce a special collaboration with Kyoto's upcomingrestaurant "Tokuhamotonari", available for a limited time from September 4th to September 8th. The former head chef of Muromachi Wakuden, Shinya Matsumoto, who is planning to open his new restaurant within the year, will be showcasing a glimpse of his new venture to the gourmets of Tokyo.

"Tokuhamotonari" is a term from the ancient Chinese Confucian classic "The Great Learning", meaning "virtue is the root, wealth is the branch". This reflects the basic Confucian teaching that prioritizes moral values and considers material wealth as secondary. This philosophy is embodied in the name of the restaurant and in Chef Matsumoto's culinary philosophy.

Chef Shinya Matsumoto is a chef who values the encounter with carefully selected ingredients from producers all over Japan. His cuisine, described as "refined rusticity", has received high praise. This philosophy and technique will also be applied to "Tokuhamotonari", creating a new world of cuisine.

◆"Tokuhamotonari" Head Chef Shinya Matsumoto
Trained at a Japanese restaurant in Tokyo and then moved to Wakuden. He served as the head chef at Kodaiji Wakuden from 2012 and as the head chef at Muromachi Wakuden from April 2018 until 2023.

◆atirom Tokyo Nanahiro Takahashi
He started his restaurant career at "Ogawaken", a long-established Western-style restaurant, where he learned the essence of Western cuisine for 8 years. Later, at the young age of 30, he became the head chef at "Shinois" in Ginza, a sacred place for wine lovers, and after a 20-year career, he joined the "Ishikawa" group. After serving as head chef of the same group's "Restaurant Nanpei Dai" and launching "NK". He has a thorough knowledge of Western, French, and Japanese cuisine, and has arrived at a new genre of "Tokyo Cuisine".

※The restaurant only accepts credit card, PayPay, and electronic payment. Please note that cash payment is not accepted.
※Please refrain from wearing strong scents such as perfume or eau de cologne. Please be sure to inform your companion of this.
