The last "white truffle" of the season, carried by Piedmont's only Japanese truffle hunter

There is a Japanese man in Alba who loves truffles. Tsuneomi Tomimatsu, a 20-year resident of Piedmont, is the only Japanese truffle hunter officially certified by the province and a knight of wine.In Japan, his white truffles from the suburbs of Aruba are rumored to be of unparalleled quality, and many of the best restaurants in Japan are eagerly awaiting his truffles.
The theme of this event is to compare the last white truffle of the season, which will be hunted to an end on January 31, the winter truffle, which is in season now, and the other truffles with all five senses.This is a special event where you can compare not only special white truffles from the last day of harvest near Piedmont, the highest peak of the country, but also several types of truffles that are conventionally rare to find due to their freshness and seasonality.
And the cuisine is a new genre of "Tokyo Cuisine," a fusion of Japanese, Western, and French cuisine by Nanahiro Takahashi of atirom Tokyo. This is a premium course that allows you to experience truffles to the fullest. Wine pairing is also available, with a selection of wines by Mr. Tomimatsu, a knight of wine, that will make you feel the current Piedmont.

◆Tsuneomi Tomimatsu
Moved to Alba, Piedmont, Italy in 2001 at the age of 25. He worked as a service man and sommelier at starred restaurants such as the prestigious "Il Centro" in Piedmont, where he became fascinated by truffles. In 2015, he was awarded the title of "Knight of Truffles and Wine" in recognition of his depth of knowledge and contribution to the promotion of truffles and wine in Alba. In 2019, he was also certified as a "Truffle Hunter". Currently, as a truffle merchant, he spreads the charm of truffles, the essence of Piedmontese culinary culture.
◆atirom Tokyo Nanahiro Takahashi
He started his restaurant career at "Ogawaken", a long-established Western-style restaurant, where he learned the essence of Western cuisine for 8 years. Later, at the young age of 30, he became the head chef at "Shinois" in Ginza, a sacred place for wine lovers, and after a 20-year career, he joined the "Ishikawa" group. After serving as head chef of the same group's "Restaurant Nanpei Dai" and launching "NK". He has a thorough knowledge of Western, French, and Japanese cuisine, and has arrived at a new genre of "Tokyo Cuisine".
