The rich lean flavor and lingering aftertaste, and the surprisingly clean and smooth fat.
Only females that possess the genes for deliciousness are raised for a long period of time, and only up to six cows are shipped per month.
This is a rare premium beef.


We raise only females that have inherited the Tajima lineage, the roots of Japanese beef. Tajima beef is characterized by the deep flavor of the lean meat, the high quality fat with a low melting point, and the sweet and powerful aroma and aftertaste that spreads when it is grilled.

< Long-term fattening >
We aim to ship the cattle in 43 months, but the cattle are fattened for 36 to 40 months or more, which is about one year longer than the average for Japanese black beef (28 months). By taking the time to raise the beef, the melting point of the fat is lowered and the amount of amino acids accumulated is increased, resulting in a "lean meat" with a concentrated flavor.

< Our special bait >
The only ranch that consistently feeds its cattle with non-GMO feed from breeding to fattening is " Ishigaki Island Kitauchi Ranch" at present. Because Ishigaki Island has long hours of sunlight, they are able to harvest grass 5 to 6 times a year, and they manage about 30,000 ㎡ of grassland and paddy fields on their own, producing almost 100% of their own roughage.
